The white kidney bean (WKB) is a variety of common bean that comes from the herbaceous plant Phaseolus vulgaris. White kidney beans are considered to be a superfood. As most other beans, WKB is an excellent source of cholesterol-lowering fiber, high in iron, potassium, selenium, molybdenum, thiamine, vitamin B6, and folic acid. The high dietary fiber in white kidney bean manages elevation of blood sugar level after meal. White kidney beans contain both soluble and insoluble dietary fibers. The soluble fibers bind with the bile acids and eliminate from the body, thus preventing the bile acids to get reabsorbed in the liver. White kidney beans contain an amylase inhibitor known as phaseolamin. Pancreatic amylase is responsible for the breakdown and subsequent absorption of carbohydrates in the intestine. WKB extracts have shown to inhibit amylase effectively. The body's inability to break down carbohydrates leads to lower absorption of calories from carbohydrates and possible weight loss.
